- Abstract:以元蘑为实验原料,采用酶提取法提取多糖,以元蘑多糖提取液为原料加入适当蔗糖,柠檬酸配制成一种元蘑多糖饮料。通过单因素实验和Box-Be hnken得到最佳工艺条件为:酶添加量3%,酶解温度60℃,酶解时间3h,多糖提取率为3.29%。通过感官评价得出,元蘑多糖饮料最佳配方为:元蘑多糖提取液添加量为70%,蔗糖添加量为8%,柠檬酸添加量为0.2%。元蘑多糖提取液制备饮料口味清香,酸甜可口,为元蘑产品进一步深加工提供思路。
